Then they go to a closed bioreactor, where \u003cstrong\u003econtrolled fermentation takes place for 48 hours\u003c\/strong\u003e. After this stage, the fruits are depulped and \u003cstrong\u003esubjected to a second fermentation lasting 72 hours, using a solution containing microorganisms from the first process\u003c\/strong\u003e.
