The cherries are then subjected to 36 hours of whole cherry pre-fermentation, after which they undergo flotation and disinfection using sea salt at a concentration of 2% of the total water volume in the tank.\u003c\/p\u003e\u003cp\u003eThe next stage is anaerobic fermentation in steel tanks equipped with pressure-regulating valves. After transfer to a second tank and depulping, fermentation run-off is collected, with 200 liters of it going into each fermentation tank along with added enzymes designed to extract a specific, floral aromatic profile. Each tank, holding up to 2,800 kg of coffee, ferments the beans for 6 days, allowing for the development of a complex flavor profile.\u003c\/p\u003e\u003cp\u003eAfter fermentation, the beans are mechanically dried in a silo for 2–3 days at a temperature not exceeding 38°C to achieve optimal moisture levels.
