The process begins in an \u003cstrong\u003eAgaarde\u003c\/strong\u003e three-disc pulper, which removes the skin and pulp and sorts the coffee by density.\u003c\/p\u003e\n\u003cp\u003eThe coffee then undergoes dry fermentation for 18–36 hours in concrete tanks, followed by washing and a second density sort. Finally, the beans are sun-dried for 12–20 days on African beds, which are covered during the hottest parts of the day and at night.\u003c\/p\u003e\n\u003cp\u003eHarvests take place from October to December, after the flowering period in February–March.
