Coffee cherries are chosen according to seasonality to ensure maximum freshness of the raw material, and then they go to El Vergel, where the advanced processing begins.\u003c\/span\u003e\u003c\/p\u003e\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eThe first stage is \u003cstrong\u003e48-hour anaerobic fermentation of whole fruits.\u003c\/strong\u003e Then the coffee is \u003cstrong\u003edepulped,\u003c\/strong\u003e and the beans covered with a layer of pulp go to the \u003cstrong\u003eco-fermentation process using specially selected yeasts and natural banana-inspired aromatic compounds\u003c\/strong\u003e. Fermentation lasts about five days and is designed to \u003cstrong\u003eemphasize creamy texture, intense sweetness, and richness of aromas.\u003c\/strong\u003e\u003c\/span\u003e\u003c\/p\u003e\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eAfter fermentation, the coffee is pre-dried on the patio, and then goes to static silos, where the drying process is controlled, ensuring high repeatability and quality stability.
