Elkin regularly trains his employees to ensure that only the best, fully ripe fruits are selected.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eElkin describes this lot as \"Cold Fermentation\"\u003c\/strong\u003e due to its unique processing method. \u003cstrong\u003eFirst, the fruits are disinfected with a citric acid solution, then subjected to flotation to remove unripe cherries. The next stage is 36 hours of oxidation in bags, after which the fruits are placed in baskets and stored for an additional 80 hours in a room at 10°C.\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eNext, the cherries are transferred to parabolic dryers, where they are regularly turned every three hours to ensure even drying.
