This is our second purchase of this washed, complex coffee – and it was definitely worth it.\u003c\/p\u003e\n\u003cp\u003eIn the cup, you'll find a profile inspired by classic \u003cstrong\u003eKenyan coffee\u003c\/strong\u003e, intertwined with characteristic Colombian sweetness. It’s a clean and multifaceted filter coffee, dominated by juicy notes of \u003cstrong\u003eblackcurrant and apple\u003c\/strong\u003e, citrusy \u003cstrong\u003ebrightness of lemon\u003c\/strong\u003e, and a delicate, \u003cstrong\u003efloral finish\u003c\/strong\u003e, elegantly completing the experience.\u003c\/p\u003e\n\u003cp\u003eOur pour-over roast is designed to emphasize the \u003cstrong\u003ecoffee's purity and character\u003c\/strong\u003e while maintaining high solubility. This makes it also excellent for \u003cstrong\u003eespresso\u003c\/strong\u003e, especially if you prefer more \u003cstrong\u003eexpressive, intense extractions\u003c\/strong\u003e.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eProcessing\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eCoffee cherries are harvested at peak ripeness every 21 days, then fermented for 12 hours in a wooden tank. Next, they are depulped (separated from the pulp) and undergo dry fermentation in a tiled tank for another 48 hours.\u003c\/p\u003e\n\u003cp\u003eAfterward, the mass is covered with water and undergoes wet fermentation for an additional 10 hours.
