From its very beginning, Villa Pastora \u003cstrong\u003ehas been a family enterprise.\u003c\/strong\u003e Successive generations of producers have jointly developed the farm, passing on knowledge, experience, and a passion for creating exceptional coffee.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eCurrently, the farm is managed by Yulieth Mora\u003c\/strong\u003e, who has played a key role in transforming Villa Pastora from a family plantation into a local community hub. Thanks to her commitment, the farm supports residents by creating jobs, providing advice on post-harvest techniques, and \u003cstrong\u003eassisting neighboring producers\u003c\/strong\u003e who do not have their own infrastructure for processing coffee. Since its inception, Villa Pastora has based its production on sustainable farming methods, constantly focusing on quality.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eThis lot of the Ombligon variety\u003c\/strong\u003e – rare and valued for its characteristic \"navel-like\" shape and exceptionally expressive flavor profile – \u003cstrong\u003ewas processed using a strain of \u003cem\u003eSaccharomyces cerevisiae\u003c\/em\u003e yeast,\u003c\/strong\u003e which allowed for extended fermentation in the presence of mucilage (the natural pulp layer surrounding the bean).
