Cultivation is carried out with great attention to detail and respect for the environment — the forests surrounding the farms create a stable microclimate and protect the soil from extreme weather conditions.\u003c\/p\u003e\n\u003chr\u003e\n\u003ch2\u003eProcessing\u003c\/h2\u003e\n\u003cp\u003eThe coffee has undergone \u003cstrong\u003ewashed\u003c\/strong\u003e processing, which allows the region's terroir to fully express itself. The fruits are harvested only at full ripeness, then subjected to a short maceration, after which they are depulped and fermented for 24–36 hours. Each stage is carefully controlled to maintain clarity and transparency of the flavor profile.\u003c\/p\u003e\n\u003cp\u003eDrying takes place in a covered, well-ventilated greenhouse, where the coffee has stable conditions and ample time for even drying.\u003c\/p\u003e\n\u003cp\u003eThanks to its high altitude, surrounding forests, and fertile soil, coffee from El Diamante offers a clean, elegant profile with a delicate jasmine-floral finish and distinct fruitiness.
