The farm grows varieties such as Caturra, Tabi, Pink Bourbon, Geisha, SL 28. It is a family business, consisting of 7 siblings, each with their own coffee cultivation area. The farm has a shared wet mill and drying facility, where processes such as washed, honey, and natural with extended fermentation are carried out.\u003c\/span\u003e\u003c\/div\u003e\n\n\u003cdiv\u003e\u003cspan\u003e \u003c\/span\u003e\u003c\/div\u003e\n\n\u003cdiv\u003e\u003cstrong\u003ePROCESS\u003c\/strong\u003e\u003c\/div\u003e\n\n\u003cdiv\u003e\u003cspan\u003e1. Fermentation temperatures range from 14 to 24 degrees Celsius, and during drying in plastic dryers and tents (Elvas) from 18 to 22 degrees Celsius. The harvest of this coffee batch took place at the end of December.\u003c\/span\u003e\u003c\/div\u003e\n\n\u003cdiv\u003e\u003cspan\u003e2. The washing process for Pink Bourbon coffee was excellent. We carried out meticulous harvesting, selecting only ripe cherries.\u003c\/span\u003e\u003c\/div\u003e\n\n\u003cdiv\u003e\u003cspan\u003e3. Then the cherries were floated to remove dry beans, leaves, and impurities.\u003c\/span\u003e\u003c\/div\u003e\n\n\u003cdiv\u003e\u003cspan\u003e4. Afterwards, they were mixed and left in tanks for 48 hours with open fermentation, at a temperature of about 15 degrees Celsius. After washing, the coffee was moved to dryers for 25 days.\u003c\/span\u003e\u003c\/div\u003e\n\n\u003cdiv\u003e\u003cspan\u003e5.
