Freshly harvested coffee cherries are placed in a bag for 10-12 hours to achieve a rapid temperature increase. Bacteria present in this environment and on the cherries begin to break down carbohydrates into sugars, which further raises the temperature. The coffee is then cooled in a water tank at 8-10 °C, after which it is depulped. While this process is taking place, maypop, passion fruit, and curuba fruits are crushed and prepared for addition to a yeast and bacteria culture. The mixed coffee, prepared fruits, and activated starter cultures are placed in tanks for anaerobic fermentation for 6-8 days.
