Edwin Noreña is a well-known figure in the specialty coffee scene. On his Campo Hermoso farm in the Quindío region of Colombia, he sets new standards for modern processing methods. His coffees are renowned worldwide – and for good reason, as quality, innovation, and distinctive flavor profiles are the foundation of his work.
To create Cinnamon Swirl, he used the Caturra varietal – a particularly aromatic selection that develops its sweet and spicy complexity through the Honey co-fermentation method.
After partial removal of the pulp, the coffee cherries go directly to drying beds without a washing stage – this process intensifies natural sweetness and brings out spicy flavor notes.
The result? A creamy coffee with a medium body, delicate sweetness, and notes of gingerbread, vanilla, and orange, complemented by a subtle cinnamon accent.
