Colombia Jairo Arcila Green Apple - Specialty Coffee co-fermented with fruit by Slovakian Kavoholik
Grown at an altitude of 1450–1500 m above sea level, this coffee comes from the farm of Jairo Arcila – a third-generation producer who has been developing his plantations for over 40 years and experimenting with processing methods to extract the most from the beans. His approach combines tradition with modern processing techniques, resulting in exceptionally distinct flavor profiles.
☕ Flavor profile
The cup is dominated by notes of:
-
juicy green apple – adding pleasant acidity,
-
subtle chocolate,
-
delicate, effervescent notes reminiscent of champagne.
Such a carefully composed profile makes the brew both complex and incredibly harmonious – ideal for slow brewing with pour-over methods (e.g., V60, Chemex, dripper).
🔥 Process and roasting
The beans undergo a Honey with anaerobic green apple co-fermentation process – an innovative fermentation that enhances the natural sweetness and fruity character of the coffee.
