Swerl Rwanda Vincent Rukeribuga Red Bourbon
Fruity, sweet, and slightly "alcoholic" Rwanda with experimental processing from Swedish roastery Swerl.
Origin:
This is the first batch of coffee from Vincent Rukeribuga at Swerl roastery. Vincent Rukeribuga is the owner and operator of his own farm located in Kamonyi village, in the Cyato region of Rwanda. He began his coffee growing journey in 1989 with just 100 seedlings, gradually increasing the scale of his production over time. As he says, he noticed that his neighbors were able to finance their children's higher education through coffee cultivation, which motivated him to pursue similar endeavors.
Vincent's meticulousness in selecting coffee cherries and cultivating plants was recognized when he supplied coffee to a local processing station. It was decided to develop anaerobic fermented coffee batches with him.
Processing and Flavor Notes:
Once a week, Vincent delivers freshly picked cherries to the processing station. The cherries are immediately sorted to remove defects, then fermented in sealed tanks for 24–72 hours, depending on environmental conditions and factors such as sugar content, which directly affect the fermentation process. After fermentation, the cherries are transferred to drying beds, where they sun-dry for an average of 20 days — they are turned every 45 minutes to ensure even moisture throughout the batch. Once dried, the cherries are stored in a cool and dry place before being hulled, cupped, and then undergoing final processing before export.
Here we have Rwanda Red Bourbon beans processed using the anaerobic natural method, with flavor notes of cherry jam, dark chocolate, and hints of violets. Sweet and slightly alcoholic notes as an aftertaste.
