Colombia Los Nogales Low Caf from Parisian roaster Tanat (formerly KAWA)
Tasting Notes: Lemon – Bergamot – Strawberry
This low-caffeine coffee comes from a meticulous selection of ripe beans, sorted by density after disinfection.
Decaffeination begins with immersing the beans in hot water (80°C) to open the pores, followed by three washes with a natural solvent derived from coffee pulp, which removes approximately 95% of the caffeine while preserving the aromas.
Next, a controlled fermentation is carried out for 96 hours using a starter from previous batches, at a temperature of 18°C, to enrich the aromatic profile.
The result is a surprisingly expressive coffee, with pleasant acidity and fruity notes.

About Los Nogales:
Around 80 years ago, Ricardo Hernández and Concepción Castillo founded the Los Nogales farm in Pitalito, Huila, with the ambition to make coffee history.
Their youngest son, Ricaurte Hernández, born in 1952, distinguished himself by his dedication to the land, generosity, and entrepreneurial spirit. Together with his partner, Suldery Arango, he created a true coffee empire, which in 2005 was crowned with victory in the "Cup of Excellence" competition in Colombia.
A visionary and innovator, Ricaurte left a strong legacy after his tragic death in 2013, a victim of rural violence. His youngest son, Oscar Fernando, took over the farm to continue this vision.
Thanks to his experience in environmental management, he transformed Los Nogales into a modern coffee production center, combining quality, sustainability, and innovation.
