Produced by Jamison Savage in Panama, this coffee underwent a fermentation process known as carbonic maceration, followed by washed fermentation.
Carbonic maceration involves placing whole cherries in a stainless steel barrel and allowing them to rest in a carbon dioxide-rich atmosphere.
This method enables the development of sophisticated aromatic complexity while maintaining beautiful clarity in taste.
