Kolonist is a renowned Ukrainian producer of premium wines. The winery was founded in 2005 by the Plachkov family in the Danubian Bessarabia, in the Odesa region, where winemaking is a family tradition and a tribute to historical heritage. Bashta port wine stands out with a rich aroma dominated by notes of dark chocolate, dried plums, raisins, and spices. On the palate, it is harmonious, with soft tannins, distinct accents of dried cherries and currants, and a long, fruity finish.
This mature wine pairs perfectly with dark chocolate and aged cheeses — and now also with coffee! The love story between Yoko and Kolonist has lasted for years, and this is their third collaboration. We received a barrel previously used for this port, filled it with washed-processed Colombian coffee, and left it for three weeks, stirring regularly. After three weeks, the coffee was removed and left for another week in sealed GrainPro bags for stabilization.
As a result, the washed Colombian coffee retained its bright acidity, which, under the influence of barrel aging, transformed into notes of blackcurrant. The entire flavor profile became rich, with accents of dried banana, dried plums, raisins, and a distinct aftertaste of sweet red wine.
And when is a better time to enjoy this coffee than now? Whether on foggy autumn mornings or cool evenings — this coffee is perfect and exceptionally soothing.
