Raised beds are scaffolding-like structures that support perforated, parchment-lined trays that hold the coffee cherries. The holes in the structure allow for nearly 360 degrees of airflow, ensuring that the coffee dries evenly when proper bed rotation is practiced. Some even go so far as to cover the beds with a partial sunshade, which prolongs drying and ensures that the cellular structure of the coffee remains largely undamaged by UV radiation.
