The openings in the structure allow for nearly 360-degree airflow, ensuring even drying of the coffee when proper bed turning is practiced. Some even go as far as covering the beds with partial sun-shades, which prolongs drying and ensures that the coffee's cellular structure remains largely undamaged by UV radiation.
