This coffee was produced at Finca Milan (Risaralda) under the supervision of Julio Andrés Quiceno and is the result of the Culturing Nitro process — a fermentation designed like a laboratory experiment, not a ritual.
It's not about "adding fruit for flavor."
It's about transforming the bean.
🧪 What is Culturing Nitro?
The Culturing process is based on controlled fermentation using selected microorganism cultures, conducted in a closed bioreactor. In the Nitro version, nitrogen plays a key role, which:
- displaces oxygen and creates an anaerobic environment,
- stabilizes the fermentation process,
- allows precise control of pressure within the bean,
- reduces the risk of overheating and degradation of the cellular structure.
This is not a "longer" or "stronger" fermentation.
It's a predictable fermentation.
🍉 The role of watermelon
Here, co-fermentation with watermelon was used, which acts as a fermentation substrate, not an aroma.
- watermelon provides specific sugars and precursors,
- microorganisms convert them into aromatic compounds,
- these compounds penetrate the bean structure under controlled pressure and time.
The effect is not about a "watermelon aftertaste."
The effect is about changing the coffee's flavor matrix.
