Coffee Origin, Processing, and Flavor Notes:
At El Girasol farm, coffee production is an incredibly precise and thoughtful process. Only fully ripe cherries are picked and delivered to the processing station located on the plantation. Fermentation begins with 36 hours of oxidation in special fermentation tanks. The coffee is then rinsed, washed, and de-pulped, followed by a second fermentation lasting 14–16 hours. After a final wash, the beans are dried on the patio until they reach the ideal moisture level.
The farm is located at an altitude of 1,750 m above sea level, where coffee grows among banana trees, citrus, avocado, and native trees, creating a sustainable agroforestry system. Robinson, a third-generation coffee producer, has managed El Girasol for over 10 years, gradually shifting the emphasis from traditional washed processing to more controlled and standardized fermentation methods. His goal is to improve production quality, build stable business relationships, and achieve financial independence through top-quality coffees.
