Introducing Starlight — our decaffeinated offering within the Signature Range, which fully lives up to its name. This is a coffee you can enjoy any time of day or night, without any compromises. This lot — Vayichil (which in the Mayan language Tzotzil means "to dream") — comes from the mountainous region of Jaltenango in Chiapas.
Over 300 families belong to La Tribu — a producer organization operating in Jaltenango and the Sierra Madre mountain range. Together with our importers Falcon Coffee and Bean Voyage, we have partnered with a network of 65 women producers affiliated with La Tribu — women who not only cultivate exceptional coffee but also build the economic independence of their communities.
Vayichil is an expression not only of their dedication to quality but also their commitment to resilience, education, and long-term sustainability. It is a coffee rooted in language, land, and leadership — and a dream fulfilled, captured in every cup.
Processing:
The coffee was decaffeinated using the Mountain Water Process in Veracruz, Mexico — a method of removing caffeine without the use of chemicals, which helps preserve the integrity of the beans and their natural sweetness.
In this process, green coffee is soaked in pure water to extract caffeine, which is then filtered out using a carbon system. After this stage, the beans reabsorb their natural flavor compounds, thus preserving the coffee's original profile and complexity.
This particular lot consists of Peñazco and Bourbon varieties, grown at an altitude of 1650–1800 meters above sea level, cultivated organically and hand-picked by members of the La Tribu community.
