This lot comes from the Yunguilla farm in Azuay province. All coffee produced on this farm is Juan Peña Certified. This certification confirms full control over every stage of production – from the Genetic Bank, where only second-generation seeds are stored, through advanced cultivation techniques and soil enrichment practices, to the post-harvest processing perfected over years of experimentation. Sidra is a variety unique to Ecuador. It was created through years of selection and observation as a hybrid of Bourbon and Typica, with subtle influences from Ethiopian heirloom varieties, responsible for its floral and tropical-fruity profile.
