Origin:
El Jardín is a family farm located in the La Paz region of Honduras, established in 1981 and run by four generations of coffee growers. It is situated at an altitude of 1,400–1,650 m above sea level, near the Montecillos reserve. The farm is distinguished by its clay soils and cool, mountainous climate, which favor the production of smaller quantities but significantly higher quality beans.
On 32 hectares, coffee rated 85+ and 83 points is grown, along with avocados. The farm employs sustainable agricultural practices, such as organic matter recycling and active soil protection.
Their flagship process is 90-hour dry anaerobic fermentation. Ripe fruits are hand-sorted, fermented whole in airtight tanks, and then dried on raised beds. This method allows for intense aroma and tropical flavor notes — bright, fruity, berry, and wine-like — while avoiding overly alcoholic tones thanks to precise pH level control.
