This is a truly special premiere for us: our first coffee from India, sourced from a farm we've admired for years—the legendary Ratnagiri Estate. Nestled in the lush Western Ghats and surrounded by a protected tiger reserve, Ratnagiri has been building its reputation for almost a hundred years as one of India's most innovative and uncompromising coffee producers.
The plantation's history dates back to 1927, when Patre K. Shivappaiya purchased the land (then partially covered by jungle) and planted the first coffee bushes. Today, after three generations, the farm is managed by Ashok and Divya Patre, who, through a science-based approach, biodiversity-supporting agriculture, and an unwavering pursuit of perfection, have transformed Ratnagiri into one of India's leading specialty plantations.
Thanks to our sourcing partner Osito, we have secured an exclusive single-origin micro-lot, meaning this coffee is available exclusively at Boo!. Lot MW64 showcases Ratnagiri's innovative, washed processing and their incredibly precise approach to fermentation. The result is a profile much fruitier and livelier than most people expect from Indian coffees.
Processing:
This coffee underwent one of Ratnagiri's signature, experimental washed processes. First, whole coffee cherries fermented for 32 hours in cherry juice, in specially designed stainless steel bioreactors, with the addition of mossto (juice from previous fermentations), which inoculates the tank with complex and active microflora.
Next, the coffee was depulped and entered a second, controlled fermentation stage—this time for 12 hours using mossto enriched with microorganisms. This step builds multi-layered fruitiness and high sweetness, without losing profile clarity.
After fermentation, the parchment was thoroughly washed and transferred to raised beds, where it dried slowly for 14 days. This stage allows the sugars to stabilize and the bright, distinct acidity to fully develop.
The result is a washed coffee like no other—clean yet intensely fruity; orderly yet full of energy and lightness. It's an excellent showcase of Ratnagiri's precise, scientific approach to coffee processing.
