Tasting Notes: Red Berries, Figs, Oolong
A new exceptional Pink Bourbon that reflects the work of two young producers from Pitalito in the Huila region – their story captivated us from the very first moment.
In the cup, you'll find an elegant profile with red fruit acidity, fig sweetness, and a floral oolong tea note, perfectly showcasing all the best a naturally processed coffee has to offer.
Producer:
Wilmer Moncayo and his wife Yenni own and operate farm La Loma in Pitalito, Huila region, where they cultivate coffee on 6.5 hectares at an altitude of 1800 m above sea level.
Both grew up in coffee-farming families, but Wilmer's path to owning his own farm was far from typical. After spending part of his youth working in the United States, he returned to Colombia and bought La Loma almost a decade ago. Today, together, they focus on producing exceptional specialty coffees, growing both classic varieties and unique batches of Pink Bourbon and Gesha.
Driven by a pursuit of the highest quality and precise processing, Wilmer and Yenni are consistently building a future based on craftsmanship, a sustainable approach, and an authentic passion for coffee.
Processing:
The process begins with the selection of fully ripe fruits, followed by flotation, which ensures high quality and uniformity of the batch.
Next, the coffee develops its character during controlled fermentation, where conditions are constantly monitored to prevent defects and highlight the flavor profile in the cup.
Finally, the fruits are dried whole on raised beds in a slow process, with regular turning for even drying. This approach allows for better integration of sugars from the pulp into the bean, giving the coffee distinct sweetness, greater complexity, and a fruity-floral character.
