🌱 Variety Yellow Colombia
Yellow Colombia is a rare (not as widely known as e.g. Yellow Bourbon) botanical Arabica variety, in which ripe cherries turn yellow instead of the classic red.
It was developed as a result of research into plant resistance to diseases such as coffee rust, and to improve flavor and balance the profile.
This variety is known for its bright, lively acidity and fruity notes, making it highly valued in single-origin or rare variety coffee segments.

This is often the work of small producers or exceptional farms who sell coffee lots to roasters in Europe and the USA on demand — hence the lack of many retail offers with ready-made descriptions.
