A coffee full of expression and intensity — El Diviso Sidra from Nestor Lasso is a spectacular example of how vibrant and aromatic the Sidra varietal can be. This naturally processed Sidra explodes with aromas of ripe peach, which remain perceptible from the first sip to the long finish. Juicy sweetness, nectarous depth, and a refined floral structure lend this coffee fascinating complexity.
The cup is dominated by notes of ripe peach, lychee, and syrupy, nectarous sweetness, accompanied by aromas of jasmine flowers, fruity sangria, and a clean, fruity finish. It's a coffee full of energy, luminous, and exceptionally clean — ideal for those seeking expressive, aromatic cups.
Nestor Lasso belongs to the young, dynamically developing generation of innovators in Colombian coffee. Just a few years ago, together with his brother Adrian, he took over the family farm and made a conscious decision — to move away from traditional commercial coffee production towards the specialty segment and experimental fermentation methods.
Together with Jhoan Vergara, who also grew up in a family of coffee producers, they created the El Diviso project. Two farms — El Diviso and Las Flores — joined forces, creating a center of excellence where three young producers combine knowledge and experience to create exceptional coffees.
With the support of CATA Export, a multi-year phase of experiments, tests, and process refinement began. Together, they developed precise fermentation protocols that have gained international recognition. Many of their coffees are now used in barista competitions across Europe — including by Brewers Cup winners in Ireland and finalists in competitions in Austria.
This Natural Sidra is an impressive result of this collaboration — a multi-layered coffee full of energy, intense fruitiness, and extraordinary clarity. The combination of the rare Sidra variety, Nestor's sensory precision, and a carefully controlled, multi-stage fermentation process makes this a true gem of our Collector's Roast series and a glimpse into the future of Colombian coffee.
