Farm

This coffee comes from El Diamante village in northern Peru, near Jaén. In this mountainous region, it is cultivated by Roger Chilcon Flores and his family. Their small farms are located at an altitude of 1900–2000 m above sea level, where cooler nights and slower fruit maturation naturally increase flavor complexity.

The family primarily focuses on Red Caturra and Yellow Caturra varieties, which thrive in these conditions. Cultivation is carried out with great attention to detail and respect for the environment — the forests surrounding the farms create a stable microclimate and protect the soil from extreme weather conditions.

Processing

The coffee has undergone washed processing, which allows the region's terroir to fully express itself. The fruits are harvested only at full ripeness, then subjected to a short maceration, after which they are depulped and fermented for 24–36 hours. Each stage is carefully controlled to maintain clarity and transparency of the flavor profile.

Drying takes place in a covered, well-ventilated greenhouse, where the coffee has stable conditions and ample time for even drying.

Thanks to its high altitude, surrounding forests, and fertile soil, coffee from El Diamante offers a clean, elegant profile with a delicate jasmine-floral finish and distinct fruitiness. It was this combination of freshness, precision, and natural sweetness that led us to include it in our offering. In the cup, it is bright and full of energy, yet has a depth that makes you want to return to it.
