Tasting notes: Cherry liqueur – Pineapple – Passion fruit
This coffee from Granja la Esperanza farm offers a cup full of sweetness and complexity, with notes of cherry liqueur, pineapple, and passion fruit, a creamy body, and a pleasant acidity on the finish.
A complex coffee, combining intensity with silky sweetness.
Description of the fermentation process:
Only ripe coffee cherries are selected for green coffee fermentation; they are hand-picked and submerged to filter out lighter, less aromatic beans. After measuring their natural sugar content, they are carefully fermented in GrainPro bags for 70 hours. Every 5 hours, the cherries are gently turned to allow each one to absorb its aromatic essence, which enhances their natural acidity and fruity notes.
Next, the cherries undergo a 3-day mechanical drying process at a controlled temperature of 38–40°C. After this process, they complete their natural drying on raised beds for 12 to 15 days, developing richness and flavor complexity.
