Flavor notes: dark chocolate, ripe orange, cardamom, juniper
Dominant juniper notes gave the coffee a pleasant, fresh, piney aftertaste, enhanced citrus and spice aromas brought notes of orange peel and cardamom to the heart of the flavor, all beautifully highlighting the chocolate notes typical of washed Colombian coffee.
Processing - description from the roastery:
Usually with infusions, we play around with nitro environments and cold maturation, but not this time. We went the other way: we sprayed the coffee with gin, mixed it thoroughly, and left it in a sealed GrainPro for a day. Then we spread a one-centimeter layer of coffee on perforated steel sheets, stirring constantly, and left it for 2 days to dry at room temperature (25–28°C). We roast the coffee for pour-over, exactly as we like it — with a reduced profile for fuller acidity development — pack it, and voilà!
