Origin:
El Mirador — Elkin Guzman's farm, whose family has been producing coffee for over 70 years. 12 of these years have involved plantations with a particular focus on research into processing technologies. El Mirador is located in the municipality of Palestina, in the village of El Portal, near the Pompeii Reserve in the Magdalena River Valley. The farm covers 32 hectares, most of which are exotic coffee varieties such as Catiope, Mokka, Tabi, Geisha, Orange, Striped, and Pink Bourbon. 2 hectares are dedicated to Caturra plantations, which are used for processing experiments. Elkin has standardized the workflow and processing procedures used on this farm to ensure consistency and quality control at every stage. He provides meticulous attention to detail and an innovative approach to fermentation, including many processing techniques such as coffee maceration, natural lactic, and acetic processes.
Processing and Flavor Notes:
Selected coffee cherries are placed in plastic containers to begin fermentation. 150 kg of cherries are used and left tightly sealed for 60 hours. During this time, the coffee undergoes initial fermentation, which allows for the activation of microorganisms and the release of CO2. At this time, 10 liters per can are added to the starter to begin co-fermentation. The fermentation process lasts 330 hours. After this time, the coffee is removed from the containers and transferred to drying facilities.
