Slovak roastery Concept Coffee Roasters and their Ethiopia Diima Halo, Natural processed
A vibrant brew with a dessert-like character, featuring notes of jammy red plum and wild blueberry, balanced by a rich, creamy finish reminiscent of yogurt. Bright, silky, and deep in flavor.
Cupping profile: red plum, blueberry, yogurt. ☕🫐🍑
The coffee comes from the village of Banko Chelchele, located in the Gedeb woreda district in the Gedeo Zone, which belongs to the Southern Nations, Nationalities, and Peoples' Region. This region is known for its ideal climate and altitude conducive to coffee cultivation.
The coffee from this lot was grown at an altitude of 1900–2300 m above sea level, which favors the development of complex and distinctive flavor profiles.
In Chelchele, coffee cultivation is not just work — it is a way of life deeply rooted in the heritage of the local community. Knowledge of coffee cultivation and harvesting is passed down from generation to generation, giving residents vast experience in nurturing and harvesting coffee cherries.
This strong cultural bond with coffee has shaped local traditions, lifestyles, and livelihoods, making it an important element of the entire community's identity. ☕🌿
Processing:
Harvesting takes place between October and December. Farmers usually hand-pick ripe coffee cherries, making sure to select only the highest quality ones.
In the natural process, whole cherries are sun-dried. This process usually takes 2 to 4 weeks, and the coffee cherries are regularly turned to ensure even drying.
Once the cherries reach the appropriate moisture level, they are stored in a cool place for several weeks. This resting period allows for better aroma development in the beans.
After this stage, the dried cherries are hulled to remove the dried skin and pulp. Then the beans go to a mill, where the parchment layer is removed. This produces green coffee beans, ready for further processing and roasting. ☕🌞
