Processing:
This batch begins its process with freshly harvested coffee cherries, which are sorted and selected in water, then undergo 110 hours of anaerobic fermentation.
After fermentation, the beans are transferred to sheds, where they dry for 25 days until they reach a moisture level of approximately 11%.
