Colombia El Diviso Nestor Lasso from the Dutch roastery Kolibri Coffee Roasters. Our recommendation :).

Over the past year, brothers Nestor and Adrian Lasso took over the family farm and made a bold decision — instead of following the traditional path of coffee cultivation, they decided to focus on experiments and innovations in the specialty coffee segment. Together with their friend and producer Jhoan Vergara, they created the El Diviso project — an enterprise combining two farms: El Diviso (Lasso) and Las Flores (Vergara), located near Pitalito, in the Huila region of Colombia.

Their collaboration further developed through a partnership with CATA Export. Together, they began ambitious research into various fermentation methods, developing precise processing protocols with one clear goal: to connect their coffees directly to the global specialty market and transform the way Colombian coffee is perceived and appreciated worldwide.

Processing:

Only fully ripe coffee cherries are hand-picked. They are then disinfected and floated in water to remove any impurities and low-density beans. Final manual selection ensures that only the best cherries proceed to further processing.

The whole cherries then undergo a 14-hour oxidation process, which increases their complexity and develops their flavor profile, after which they are depulped.

The next stage is a 60-hour anaerobic fermentation, followed by a 12-hour immersion fermentation using mosto (i.e., fermentation juices) from previous batches.

The drying process takes place under strictly controlled conditions, maintaining the appropriate moisture level and preserving the highest quality of the bean. The temperature never exceeds 38°C, and drying continues until a moisture content of 10–11% is achieved.
