A note from Coffeemates: a very pleasant, strawberry-flavored coffee. Balanced, with a noticeable strawberry taste, but without the intensity of a typical co-ferment.
ABOUT THE FARM
El Mirador — Elkin Guzman's farm, whose family has been producing coffee for over 70 years. For the past 12 years, they have dedicated particular attention to research into processing technologies. El Mirador is located in the municipality of Palestina, in the village of El Portal, near the Pembe River and its tributary, the Magdalena River. The farm spans 32 hectares where exotic coffee varieties such as Catiope, Mokka, Tabí, Geisha, Orange, Striped, and Pink Bourbon are grown. 2 hectares are dedicated to cattle farming. Elkin has standardized the workflow and processing procedures used on this farm to ensure consistency and quality control at every stage. He pays immense attention to detail and employs innovative approaches to fermentation, including various processing techniques such as coffee maceration and natural lactic and acetic processes.
Processing:
Harvested coffee cherries are placed in plastic barrels for initial fermentation. 150 kg of cherries are hermetically sealed for 60 hours to activate microorganisms and release CO2. Then, yeast, previously prepared by fermenting coffee with strawberries, is added to the barrels in a quantity of 10 liters per barrel, and left for 270 hours. In total, the fermentation process lasts 330 hours. After this time, the coffee is removed from the barrels and moved to the drying area. It is spread in a thin layer without exposure to direct sunlight. It is moved every 3 hours until the cherries are dry and their moisture content is between 10.5% and 11%.
This coffee is ideal for pour-over methods – dripper, Chemex or AeroPress – where it best reveals its clarity, balance and intense fruitiness.
