Café Rivense del Chirripó is a family-run processing plant established in 2005 in the Chirripó micro-region in southern Costa Rica. Located between two large mountain ranges, at an altitude of 1300–2000+ m above sea level, it benefits from a unique microclimate and fertile, rich soils. The farm has gained international recognition, including placing 5th in the Cup of Excellence 2019 for its Caturra microlot with honey processing.
Production is based on sustainable practices: using shade trees, fertilizing with organic matter, controlled use of herbicides, and protecting water sources. The cherries are hand-picked at peak ripeness, then dry-depulped (without water), and dried on raised beds and in static dryers. After drying, the coffee is milled and exported directly, ensuring full traceability.
The growing reputation of the Chirripó region in the specialty coffee world drives the development of cultivation and increases varietal diversity in this area.
