Grown in Ethiopia's Guji Hambella, in the village of Deri Kidame, where smallholders cultivate Kurume, Dega, and Wolisho varieties at altitudes up to 2125 m above sea level. The fertile soil and natural shade ensure these heirloom varieties offer the complexity and clarity for which Ethiopia is renowned.
Process
This microlot is a natural with a special "wine" process. Cherries undergo extended fermentation in anaerobic, stainless steel vacuum tanks, which imparts deep, fruity, and clean fermentative notes to the coffee. They are then dried for 15-18 days on African beds, resulting in a sweet, clear, and delicately wine-fruity cup.
