Concept Coffee Roasters Brazil Chocolate Espresso

Origin:

Sancoffee was founded in 2000 from the dream of a group of coffee growers in the Santo Antonio do Amparo region of Minas Gerais. From the very beginning, the growers envisioned the emerging specialty coffee market and the development of coffee cultivation in the region.
With the enormous support and encouragement of Mr. Fernando Paiva, a pioneer of specialty coffee in Campo das Vertentes since the 1960s, the producers acquired a warehouse and founded a cooperative. Over time, this infrastructure developed to include state-of-the-art, fully automated dry milling machines and storage solutions. From the outset, Sancoffee has been a major driving force behind the development of specialty coffee in the Campo das Vertentes region.

Sancoffee, deeply rooted in the local community, proudly supports initiatives aimed at generating progress and prosperity through the coffee industry. Together with its member farms, the cooperative engages in a series of projects focused on social and environmental responsibility to ensure the long-term sustainable development of its coffee operations.
As a result of these actions, Sancoffee received B-Corp certification in 2019. From a business perspective, Sancoffee has always been guided by transparency and trust, resulting in long-standing relationships worldwide, with most customers having been with them for over 10 years.
Consistency, innovation, integrity, management, and transparency continue to guide Sancoffee, which constantly adapts to new market trends and uses coffee as a vehicle to create a better life for all involved.

Processing and flavor notes:

Cherry harvesting is mainly done by machines, which are adapted to harvest as many ripe fruits as possible, also taking into account the different stages of ripeness of individual varieties. After harvesting, the cherries are immediately transported to paved drying patios, bypassing the wet mill.

Because there is no contact with water, this procedure largely avoids the formation of "fermented" flavors. On the patios, the beans are spread in very thin layers, almost "bean by bean", without overlapping. This increases exposure to sunlight and thus accelerates the drying process. Thanks to these two treatments, the batches retain an intense chocolate-nutty flavor with delicate notes of acidity.
When the beans reach the final drying stage (about 20% moisture), they are transported to mechanical rotating dryers, which are able to recreate the conditions prevailing on the patio, in a fully controlled environment. Temperatures are electronically preset at about 35-40°C, which allows tracking the planned drying curve and thus ensures greater uniformity of the batch in terms of moisture content.

Here we have Brazil Mundo Novo variety beans, natural processed, with flavor notes of chocolate, almonds, cocoa, and caramel.
