Brazil Lemon Tart Guariroba is a Topazio variety from Fazenda Guariroba, one of the most recognizable specialty coffee farms in Brazil. The farm is known for breaking the classic Brazilian profile, creating more expressive, "funky" coffees that are still clean and well-balanced. In 2016, it won the prestigious Cup of Excellence Brazil (Naturals) with a score of 90.5 points, solidifying its international position.

The process begins with harvesting only fruits with a Brix degree above 24°, after which the cherries undergo hydraulic selection. Then they go to a closed bioreactor, where controlled fermentation takes place for 48 hours. After this stage, the fruits are depulped and subjected to a second fermentation lasting 72 hours, using a solution containing microorganisms from the first process. Drying takes place on African beds for 30–40 days, which helps to preserve sweetness, cleanliness, and a long finish.

In the cup, the coffee is bright, aromatic, and dessert-like: lemon tart, honey sweetness, chamomile flowers, and brown sugar. This is modern Brazil – fresh, fun, and at the same time very refined.
