This coffee comes from the high mountains of the Mangshi area in China's Yunnan region and is the result of careful cherry selection and precise processing under the guidance of Olina Cai and her team at Project One Light – an initiative founded in 2021 with the aim of showcasing the full potential of Yunnan coffees. By working directly with local producers, the project creates better prospects for farmers, providing them with access to knowledge, modern infrastructure, and higher-value markets.
Operating in the heart of Yunnan, Project One Light brings together local Q-graders, processing specialists, and experienced coffee traders. The team's priority is the well-being of all participants in the supply chain, responsible management of cultivation environments, and rigorous quality control, which ensures consistency and the highest standards at every stage of production.
After harvesting, only the ripest cherries are selected and then placed in sealed tanks, where they undergo anaerobic fermentation. This process uses a patented yeast strain, whose role is to guide the development of the coffee's flavour profile. For 7 days, at a controlled temperature of 20°C, the yeast interacts with the natural sugars in the cherries, enhancing the complexity and depth of the flavour.
After fermentation, the beans are thoroughly washed in fresh mountain water to remove any remaining pulp, and then dried on raised beds for a period of 15 to 30 days.
In the cup, you can expect a subtle peach sweetness, delicate oolong tea notes, and a fresh, juicy finish reminiscent of lychee.
