We are delighted to introduce our Christmas Punch 2025 edition. It all began on the sunny days of early summer 2025, when we started planning this unique festive treat. As the magical Christmas season approaches, we invite you to immerse yourself in its unique atmosphere. With every sip of this coffee, you will be transported to a winter wonderland. The first impression evokes the exciting, tropical taste of Christmas from our youth.
This is a story from ancient times… from an era of myths and legends, when… Oh no, we're not that old – that's a completely different tale from very distant days! This coffee will remind you of the times you first tasted coconut in Christmas chocolate cookies combined with tropical fruits. The next sip will take you to the flavors of candied citrus and the soothing warmth of vanilla. These beans might just be the essence of Christmas. We hope you'll love them as much as we do.
Processing and Flavor Notes:
144-hour fermentation
The innovative process begins with the careful selection of ripe Pink Bourbon cherries, which are then co-fermented with dehydrated coconut and coconut water. Fermentation takes place anaerobically in plastic tanks for 144 hours, allowing tropical flavors to fully penetrate the beans.
After fermentation, the coffee is sun-dried for 30 days with added lemon zest, which gives it a unique, citrusy finish. During drying, the coffee and lemon zest are spread together on drying beds and exposed to both sunlight and mechanical drying, ensuring a uniform and thorough process.
Finally, the beans undergo a 45-day stabilization period in GrainPro bags before final processing.
Thanks to this precise method, a coffee with a unique flavor profile is created, featuring notes of citrus, coconut, lemonade, and a creamy texture with tropical fruit accents.
