"Las Garzas" is a typical naturally processed (or "natural fermented") coffee. This means that the coffee cherries are dried with the pulp intact, which often gives the cup more intense, fruity, and sweet notes. In this natural process, the cherries are fermented for 38 hours and then dried for eight days on raised African beds under a canopy.
Here we have Colombian Castillo and Caturra variety beans, processed naturally, with flavor notes of sherry, plums, and fruit candies.
