Origin:
Huver is a third-generation coffee grower, but his close relationship with coffee began relatively recently. Just a few years ago (before 2015), he worked as a math teacher in a school in the Nariño region. The El Paseo farm is located near Buesaco, on the Suma Paz route. It's a family farm where Huver has the opportunity to work side-by-side with his father. El Paseo has been in the family for over 20 years and is one of three farms they own. It's an exceptionally picturesque place, situated at an altitude of 1750 to 1950 meters above sea level, with numerous native trees providing shade, located on slopes overlooking the Buesaco valley.
Processing and Flavor Notes:
5 days of fermentation
The processing of Rocket Flower coffee from the El Paseo farm in the Nariño region begins with the careful selection of ripe Caturra cherries, which guarantees exceptional raw material quality. The cherries are then subjected to 36 hours of whole cherry pre-fermentation, after which they undergo flotation and disinfection using sea salt at a concentration of 2% of the total water volume in the tank.
The next stage is anaerobic fermentation in steel tanks equipped with pressure-regulating valves. After transfer to a second tank and depulping, fermentation run-off is collected, with 200 liters of it going into each fermentation tank along with added enzymes designed to extract a specific, floral aromatic profile. Each tank, holding up to 2,800 kg of coffee, ferments the beans for 6 days, allowing for the development of a complex flavor profile.
After fermentation, the beans are mechanically dried in a silo for 2–3 days at a temperature not exceeding 38°C to achieve optimal moisture levels. The coffee then undergoes a 15-day stabilization period, which ensures the consistency and high quality of the final product.
The result of this meticulous process is an incredibly distinct flavor profile, in which one can find notes of lemongrass, citrus acidity, citrus, cocoa, coffee blossom, floral accents, orange, and sweet aromas — all of which make Rocket Flower a truly exceptional coffee.
