Origin:
High in the mountains of southern Huila, Colombia, in the municipality of San Agustín, lies a vibrant community of coffee producers cultivating some of the most exceptional beans in the region. Located at an altitude of 1750 meters above sea level, this area is renowned not only for its ideal coffee growing conditions but is also a UNESCO World Heritage site due to its rich archaeological heritage.
Here, local farmers carefully nurture esteemed varieties such as Pink Bourbon, Caturra, Colombia, and Castillo, grown in harmony with the surrounding forests. With our support and guidance, these producers master innovative coffee processing techniques, enhancing its quality and complexity of flavors.
The result is a cup that tells a story of heritage, innovation, and a deep connection between the land and its people.
Processing and Flavor Notes:
The coffee cherries of the Pink Bourbon variety first undergo 48-hour pre-fermentation in airtight plastic bags, allowing them to develop exceptional flavor depth. Then, the cherries are de-pulped, and the beans, still covered in mucilage, are inoculated with dried, ground banana. This unusual step gives the coffee a creamy texture with delicate banana notes.
The beans are then fermented in this banana and mucilage mixture for five days, further enriching the complexity of the flavor profile. After fermentation, the coffee is pre-dried on open, sunlit patios, and then mechanically dried in static silos to maintain consistency. The process concludes with a 30-day stabilization period, allowing the flavors to integrate, creating a harmonious and perfectly balanced cup.
