40% Natural Ethiopia
The Halo Beriti processing station is located in the famous Yirgacheffe region, where local farmers from the village of Gedeb deliver their coffee cherries. These are wild Arabica varieties originating from the cradle of coffee, grown organically at altitudes of 1900–2400 m above sea level. The coffee is organically certified and has undergone natural processing, meaning the cherries are dried with the fruit pulp – giving the coffee a fuller body.

Selective mechanical harvesting usually involves 40–60% ripe fruits on the tree, of which about 5% are green, 10% unripe, and the rest are partially dried on the tree. Each of these fractions contributes unique characteristics to the coffee, so samples are collected, processed, and roasted to check the consistency of the flavor profile before selecting a specific batch. Sorting takes place in a specially adapted processing station: first, overripe fruits are separated by density sorting, then natural and partially dried beans are separated from ripe, unripe, and green ones.
