Colombia Banana Glaze is a unique lot of Pink Bourbon variety, processed at El Vergel Estate – a project run by Elias and Shady Bayter in the Fresno, Tolima region. El Vergel is now one of the most recognizable producers of modern specialty coffees in Colombia, known for its creative approach to fermentation and extremely precise control of every stage of production.
From the roastery: This coffee also holds special significance for us due to our direct cooperation with El Vergel Estate. We have visited the farm three times already and each time we have been convinced that behind their spectacular flavor profiles lies not only courage in experimentation, but above all, vast knowledge, discipline, and consistency.
The Banana Glaze lot is made from selected fruits sourced from the Tolima, Huila, and Caldas regions. Coffee cherries are chosen according to seasonality to ensure maximum freshness of the raw material, and then they go to El Vergel, where the advanced processing begins.
The first stage is 48-hour anaerobic fermentation of whole fruits. Then the coffee is depulped, and the beans covered with a layer of pulp go to the co-fermentation process using specially selected yeasts and natural banana-inspired aromatic compounds. Fermentation lasts about five days and is designed to emphasize creamy texture, intense sweetness, and richness of aromas.
After fermentation, the coffee is pre-dried on the patio, and then goes to static silos, where the drying process is controlled, ensuring high repeatability and quality stability. The whole process ends with a 30-day stabilization period, which allows for full integration of aromas and obtaining a harmonious and clear sensory profile.
In the cup, Banana Glaze offers exactly what its name suggests. Dominant notes of ripe banana, sweet caramel, hazelnut wafers, and vanilla. All supported by a velvety, creamy body and a long, dessert-like sweetness. This is a modern, intensely aromatic specialty coffee that delights with its rich flavor while remaining extremely coherent and balanced.
