Like all Shokunin coffees, this is an Omniroast, although we brew everything from them as a filter.
This is an exceptional coffee from Colombia, showcasing a modern approach to bean processing while maintaining elegance and flavor purity. The name, meaning "rebirth," perfectly captures the character of this lot – a fresh, vibrant, and energetic coffee designed to maximize fruity sweetness and aromatic intensity.
The beans underwent unconventional washed processing with thermal shock, a controlled temperature shock during fermentation. This process preserves the clarity of the cup while enhancing the expression of aromas and giving the coffee a juicy, almost wine-like character. The result is a profile that combines the purity of classic washed with the intensity of modern fermentation methods.
In the cup, El Renacer offers bright, fruity aromas reminiscent of lychee, raspberries, and red fruits. The taste is distinctly sweet and juicy, with a soft, velvety body and a delicately chocolatey finish. The overall impression is very harmonious – without aggressive acidity, but with a long, pleasant finish.
