The Los Patios project takes the delicate Geisha varietal to a new level of sophistication. After a short fermentation in the fruit, the cherries are co-fermented with natural peach concentrate for two days, and then slowly dried in gentle sunlight for up to 16 days. The result is a coffee with a distinct floral elegance, where the noble and complex character of the Geisha varietal harmoniously intertwines with the fruity potential of this carefully developed co-fermentation.
