Colombia Mojito Mirage comes from El Paseo farm, owned by Huver Castillo, located in the town of Buesaco in the Nariño region, at an altitude of 1750 to 1950 meters above sea level. Huver is a third-generation coffee producer, but his journey into the world of specialty coffee was unusual. Before dedicating himself entirely to coffee cultivation, he worked as a mathematics teacher. Today, his analytical approach and love for precision are evident in every stage of production. El Paseo farm, operating for over 20 years, is situated on the slopes of the Buesaco valley and surrounded by native trees that provide natural shade for the plantation.
This lot of Caturra variety underwent washed processing, but with the use of modern and experimental fermentation methods. The process begins with 36 hours of pre-fermentation of whole cherries. Subsequently, the cherries undergo flotation and disinfection in water with added sea salt. The next stage is anaerobic fermentation in steel tanks equipped with valves to control the process. After depulping, specially selected enzymes are added, whose task is to direct the fermentation towards a distinct, floral sensory profile. The entire process lasts a total of six days.
After fermentation, the coffee is mechanically dried slowly and precisely controlled, at a temperature not exceeding 38°C. It then undergoes a 15-day stabilization period, which allows for the full development of its flavor profile. The result is a coffee that perfectly reflects its name – expressive, aromatic, and almost surprising in how it combines the freshness of mint with the elegance of lavender.
From the roastery: We had the opportunity to visit the farm in person in November 2025, and we were greatly impressed by the meticulousness with which Huver approaches every stage of fermentation. In the cup, this precision does not translate into excessive intensity, but rather into exceptional clarity, balance, and a perfectly defined sensory identity.
