Finca Monteblanco is a family-owned coffee farm in Pitalito, run by Rodrigo Sanchez Valencia and his wife Claudia Samboni. Located on an 18-hectare hillside, it has its own wet mill and drying infrastructure at the top of the farm, while the coffee plantations spread out below. The producer focuses on experimenting with varieties and processing methods, analyzing the sugar levels (Brix) in the fruit to select the optimal process.
The coffee underwent a unique fermentation using a "mother culture" – a culture created from tropical fruit nectar (watermelon, melon), enriched with microorganisms such as lactobacillus and saccharomyces cerevisiae. This process enhances the coffee's sweetness and helps maintain a high Brix level. Fermentation lasts for up to 190 hours, maintaining a Brix level above 6 and a pH above 4. The coffee is then dried for 2-3 days in the sun and 15-18 days under cover.
The result is a unique flavor profile with notes of refreshing watermelon, sweet honeydew melon, and raspberries.
