From the roaster:
We are proud to present this Papayo variety, produced by Yury Montanchez at Finca Los Guaduales farm in San Agustín, Huila (Colombia). This is our second purchase of this washed, complex coffee – and it was definitely worth it.
In the cup, you'll find a profile inspired by classic Kenyan coffee, intertwined with characteristic Colombian sweetness. It’s a clean and multifaceted filter coffee, dominated by juicy notes of blackcurrant and apple, citrusy brightness of lemon, and a delicate, floral finish, elegantly completing the experience.
Our pour-over roast is designed to emphasize the coffee's purity and character while maintaining high solubility. This makes it also excellent for espresso, especially if you prefer more expressive, intense extractions.
Processing
Coffee cherries are harvested at peak ripeness every 21 days, then fermented for 12 hours in a wooden tank. Next, they are depulped (separated from the pulp) and undergo dry fermentation in a tiled tank for another 48 hours.
Afterward, the mass is covered with water and undergoes wet fermentation for an additional 10 hours. Following this stage, the beans are thoroughly washed of any remaining mucilage and moved to solar dryers, where they dry for 16–20 days.
